Super simple. The less fat the less you can cook it. A5 wagyu ribeye can be medium and still taste good. A grass fed bison steak better be rare or it's nearly inedible. Beef tenderloin you should order 1 or 2 temps lower than you eat your ribeye. Ya never understood how people can eat a well done steak. Lots do though.
