We smoke ours like a brisket.  225° to 250° until 160° internal temp, then wrap in foil and keep'er going until 205° or so.  Let it rest 1-2 hours and go for it.  I typically don't even trim the fat off them since they come with 1/4" or so on one side of it. 

Have one on the smoker right meow.

Had an early Burger and fries both covered in fried onions and then off to men's night golfing with my 2 boys and a couple buds from where I used to work :ylsuper:
