I just have a Weber Kettle that I setup for offset cooking to smoke. I've got an 8lb pork shoulder to smoke for tomorrow night. Couldn't pass it up at $.49 / lb.

You are getting to the point where mines starts losing pinched of bark and small cuts in the meat start to appear.  Damned if I can figure it out.  

Up to 188° now. Should I pull at 200° or 210° for pulled pork?

200 should be fine. Remember to let rest for a bit wrapped in foil.

Picked up a 16lb prime packer brisket for 2.89 a lb at Costco. Grabbed a ribeye roast to cut up into steaks for our sons birthday tomorrow. 

Case of cow remaining, should be a good weekend.
