Salt potatoes are a regional dish of Syracuse, New York, typically served in the summer when the young potatoes are first harvested. They are a staple food at fairs and barbecues. In the Central New York region where they are the most popular, potatoes specifically intended for salt potatoes can be purchased by the bag along with packages of salt.[1]

As the potatoes cook, the salty water forms a crust on the skin and seals the potatoes so they never taste waterlogged, as ordinary boiled potatoes often do. The potatoes have a unique texture closer to fluffy baked potatoes, only creamier.[1] The standard recipe calls for one pound of salt for every four pounds of potatoes.[2]

I decided to move the rack of baby backs planned for tomorrow to tonight because of tomorrows forecast calling for rain. Dinner will be a little late tonight as I just put them on the smoker at 4:15PM. I'm sure it will be worth the wait :bbq:

That is awesome.  Our late doodle used to sleep/do that all the time.

yup she is my little partner in crime when I got her I wanted her to ride in the semi with me but she can't ride that long I run local but sometimes it's 3-4 hours between stops so she shadows me at home
