When you leave it sit so long the cheese hardens back up.. Needless to say my kids are finally done chain places for good after that experience.. TR isn't bad for a chain I just cringe at the prices know what I can cook for myself, for so much less and it will be so much better. I usually get their pork chops or catfish dinner. Texas Roadhouse is IMO the best place for steak of the big chains. Even given that I eat there once a year maybe twice. Prob end up at chili's, applebees, olive garden and outback a handful combined. I go to Longhorn once a week for lunch as it's right down the street and they make a great chicken and strawberry salad but i would not get a steak there I'd make it at home.
