I was a tad nervous about mine being the first time doing a bird in the smoker, for Thanksgiving, with 27 people coming for dinner. But it was pretty simple. I just went by what Butterball recommended and it turned out great. The rub I used for it was perfect too. I'm sure you could use it on chickens, game hens, ect. SVT MXZ XRS Posted November 26, 2016 Share Posted November 26, 2016 (edited) 1 cup brown sugar 1/3 cup white sugar 1/4 cup salt 2 teaspoons garlic powder 2 teaspoons onion powder 1 teaspoon white pepper 1 teaspoon black pepper Coated outside of bird with vegetable oil prior to the rub. I put a lot of rub in-between the breast skin and breast meat. I also coated inside of bird with the rub so it would penetrate the meat. I used apple wood and it went great with the brown sugar rub. Edit: I used the entire mix of rub on bird. Was almost 16# You could easily use that on an 18# bird or just make more if you wanted to. There was no such thing as to much rub with this recipe.
