Trying a market trimmed Brisket today that I picked up at a local butcher shop. Used Ben's rub just cut back on the pepper since I'm taking it to my parent's.

I've never done a brisket. I need to pick one up sometime to try.

I've got a rack of babybacks to smoke for dinner tonight :bbq:

Yep....I had to soak the meat in water to make sure the dogs could swallow it.  FUCK!

I was a tad nervous about mine being the first time doing a bird in the smoker, for Thanksgiving, with 27 people coming for dinner. But it was pretty simple.  I just went by what Butterball recommended and it turned out great.  The rub I used for it was perfect too. I'm sure you could use it on chickens, game hens, ect.  I'll post it up in a minute. :bc:

1 cup brown sugar 

1/3 cup white sugar

1/4 cup salt 

2 teaspoons garlic powder 

2 teaspoons onion powder

1 teaspoon white pepper 

1 teaspoon black pepper 

Coated outside of bird with vegetable oil prior to the rub. I put a lot of rub in-between the breast skin and breast meat. I also coated inside of bird with the rub so it would penetrate the meat.

I used apple wood and it went great with the brown sugar rub. :bc:

 

Edit: I used the entire mix of rub on bird. Was almost 16#   You could easily use that on an 18# bird or just make more if you wanted to.  There was no such thing as to much rub with this recipe. It is very good.

And last.  No reason to try that shit again.  I'd rather sort out brisket on the smoker.  Birds don't typically taste as good to me if they've been smoked.  Just not enough fat in that meat.  :dunno:

I used to like deep fried the best. But after smoking one, idk.   I can't wait to smoke another bird for Christmas
