A couple of bbq joints they went to said they don't remove the silver skin off the back of the ribs. I always understood that this was a must do. Anyone that can comment either way? sometimes its a bitch to get off and if it makes no difference then why do it? I don’t think it makes much difference in the cook itself , the silver skin isnt pleasant to eat though or have in your mouth. What type of smoker? They help for sure if your brand smoker is pretty thin.

Works good Even better is to get a small ice fishing tent and put it in that with the smoke stack vented outside. terrific especially if it's windy. I use an aluminum flexible dryer vent tube

I have been using Royal Oak 100% charcoal pellets with good results, while not as flavorful as using charcoal it's a nice compromise and are not affected by moisture. Platinum Contributing Member Blackstar Posted January 15, 2023 Platinum Contributing Member Share Posted January 15, 2023 Doing a small brisket. Wife had it in the freeze. It’s only 5 lbs, just the flat. Not sure how this will work as it’s not even 1.5 inch thick. I’ll probably turn it in to a brick. picked up a welding blanket yesterday. Giving that a try too.

Platinum Contributing Member Blackstar Posted January 22, 2023 Platinum Contributing Member Share Posted January 22, 2023 (edited) Couple of steaks for tomorrow’s dinner for my son and I. Prices are getting out of hand. I should have dug through the freezer for another package from 2 weeks earlier. racinfarmer
Have some kind of flesh dry brining for tomorrow and a cornish game hen wet brining. Going to give the bird a go, I guess.
racinfarmer
Have some piece of flesh called a "flank steak" and a Cornish game hen finishing up, after like a dozen Hamm's. Not sure what the fuck to expect from either one... 1

racinfarmer
Have a boneless turkey breast and a rack of ribs all seasoned up for tomorrow. Smoke, ride, and drink. Probably start doing the post-mortems for the season too.
racinfarmer
Got the bird and the pig on the smoker. 180°F seems like a good temp to let it ride at for a while.
