Look up what middle meat is? it surprised me to find out they only use the middle meat up there. Most of the cow meat in the US is used to lean up ground beef some is used to make beef jerky and steaks are cut very thin and tenderized or dipped. f7ben Posted May 31, 2022 Author Share Posted May 31, 2022 Dairy cows are butchered for beef. Our grocery stores get whole tenderloins in that are butchered from milk cows.
