Around here a delmonico is a ribeye that still has the tendon atatched to it. Or as a butcher here would say " they come from the same cut , they are just prepared in a different way. I recall you guys discussing - but didn't know the conclusion.? Farmer sold me any beef at 3.50 a lb (his extras). Grabbed 10 lbs of burger & whatever steaks he had. When asking for that I would say chuck eye steak or they will price you for a ribeye steak when using the word Delmonico. For 3.50 a lb ...I'll grill some pot roast steaks... chuckeye here and in Florida is right at about $6.99 and has been for a while.
