I think that's one reason a lot of places are going towards the "open kitchen" concept. We went to a new 99 a while back, the kitchen is in full view of the patrons, a number of other places are doing the same thing, you can see the chef's cooking the food. Back in my bakery sales days, I went into hundreds of commercial kitchens. Some of them had so much grease on the floor, you had to basically pretend you were ice skating.
