Look for good quality steel and a good heat treat as those will be the biggest factor in the knives ability to be sharpened and tonhd an edge. In the knife world you don't need to go crazy expensive but you definitely get what you pay for so don't go buy something first cheap and expect it to be great. Ez ryder Posted April 11, 2021 Share Posted April 11, 2021 I have 2 electric knives really all I use for turkey or a large roast. I just get the cheep ones when they get dull buy a new one. My kitchen knives are just a off the shelf block of Wüsthof like 400 bucks .
