4lb flats are tough to get right. You really have to smoke for a bit then dump in a bath of beef broth, and cover.
Do you have a Costco close? Their prime full packers are pretty good, and priced pretty well. You can always freeze the point if it’s too much, great for chili whenever you get around to it.

Multiple studies have shown there are groups of homeless that test positive, yet none report symptoms. Possible this could be the case here, especially when it’s known that some strains are more impactful than others.

I’d be curious to know what tests they’re using. Many of the antibody tests will show a positive for multiple/common corona strains, which is useless. I had read there are something like 75 antibody tests that are approved by the FDA, only two or three test for covid 19 specifically.
What’s the infection rate? If it’s still 2 or 3 then herd immunity is a ways off, even if the tests are to be trusted.
If accurate that’s encouraging.

You can even tell by looking at the fiber. The ribs you have are somewhat stringy, like a pot roast. The plate, which is typically the 3 large bones have a tighter muscle fiber. The chuck, which is generally around 4 smaller bones is a bit more stringy.
ive cooked them dozens of times. I ask the the butcher the the 3 bone plate section.

It has always been that way. I have family down there so I’ve spent a fair bit of time there going back to the 70’s. Grandpa left in 45 as he saw no future there. Most everyone else went to college and moved out of state, only a few left.
