I had some leftover steak, sliced it up and made a cheese steak sandwich with a side of salt potatoes (also leftovers)

looking for Caribbean inspired dishes for my wife's surprise 1/2 birthday on Tuesday when we're going to tell her that my daughter and I booked a surprise vacation in the Bahamas' in December for her actual 49th birthday.  

here's a few things I've considered flipping around the internet cookbooks... feel free to make suggestions. 

will likely be using the Breeo grille to cook or finish.

I'd do Jerk Chicken thighs, tostones and some beans & rice.  That jerk recipe is a bit soft on the right ingredients but not terribly far off.

Garlic, ginger, green onion, pepper, allspice, thyme, cinnamon, lime,  brown sugar, scotch bonnets, and worcestershire

the worcestershire could be subbed for soy, mushroom powder, msg or something else to up the umami...

As for quantities, that is a bit up to the chef.  All recipes will be different and the amount of scotch bonnets being the biggest differentiator.  I like my jerk with the skin and bones so thighs, legs, wings...but of course the smaller the meat the more the heat.

And yes, I know that wasn't Bahamian food, but don't think you want to try to source conch in Central sconny.
