Mozzarella Meat Loaf - 375*f - 60 minutes

1 1/2 - pounds of lean ground meat (80/20)

1/2 - cup dried bread crumbs

1 - slightly beaten egg

1 - teaspoon of instant minced onions

3/4 - teaspoon salt

1/2 - teaspoon of oregano

2 - 8oz can of tomato sauce or 1 - 15oz can of tomato sauce

1 1/2  cups of shredded Mozzarella cheese

1 - 4oz can of mushroom stems & pieces drained

1 - Grease a 12x8x2 inch baking pan and set aside

2 - Combine beef, bread crumbs, egg, onion, salt & oregano in a mixing bowl, stir in 1 8oz can of tomato sauce or half of the 15oz can off tomato sauce.

3 - Cut a piece of wax paper 15 inches long.

4 - Press the meat mixture into a 13x9 inch rectangle on the wax paper, sprinkle the meat with Mozzarella cheese and top the cheese with the mushroom pieces.

5 - Starting with the narrow end of the meat (9 inch side) lift the waxed paper to help roll the meat in a jelly roll like fashion, place the meat seam-side down in the baking pan. Don't roll the wax paper up in the meat, remove the wax paper as you are rolling the meat/jelly roll...lol

6 - Bake oven at 375*f for 30 minutes.

7 - After the 1st 30 minutes remove from the oven, pour the 2nd can or remaining part of the tomato sauce across the top of the meat loaf, Bake for another 30 minutes, cut and serve.

Acorn Squash - 375*f - 60 minutes

1 - cut the acorn squash in half, clean seeds & other stuff out.

2 - Using softened butter or margarine coat the inside of the squash & cut edge with butter or margarine

3 - Place the squash on a baking sheet cut edge/face down on the baking sheet.

4 - Bake at 375*f - for 60 minutes

5 - Remove from baking sheet and turn face up, lightly cut/score the squash with a knife, add Butter as much or as little as you like, I like a lot of Butter on mine.

Yes, but then they are roasts.  That being said a fundamental difference between a steak and a roast is that more than one muscle comes in a roast.  There are other really nice cuts that can be pulled out of a roast as well.  In particular if you get an animal that was raised better than classic feed lot nonsense.
