Preparation, and proper cooking is so critical, especially with deer-meat.

Over-cook it by a little as two minutes, and it's basically ruined. 

Same as with most steaks.   

Now that I'm caught-up a bit, I am enjoying grilling different stuff. 

I think we'll do chicken with potatoes next.    :bc::yum:

I picked up a small brisket to smoke when I was in Colebrook this afternoon.  I still haven't smoked one so I am looking forward to it

Hey @Seatofmypants  any suggestions for an injection recipe?

I think Tom’s was bought out by Humpty Dumpty. They are in Canada now.  Back in the mid 60’s my dad was plant manager for REX Potato chip co. Down here. They were bought out by Tom’s in 1968. We never ran out of chips….lol

Propane, but I've never been really happy with it. Just gonna' finish this year with it, and next year get a new one.

Holy shit, have you seen the prices on some big grilles!!!  

I been cooking with coal on a kettle style bbq for about 5 years now, sick of gas grills that are $400+ and only lasting 2 years. Not to mention that it tastes so much better

Ill be honest.....I don't inject my briskets, but I also cook full size packers though.  I inject my pork butts though.....but that injection won't work for beef.

Is Prime a good choice for the rub? Do you set some sauce at the end of the cook?

 

Just fired up the pellet grill to make a 🍕 pie.
