Frozen birds aren't bad. Just throw them in a bucket of water to defrost.

It was a 13lb free range, no gmo for the same price as a frozen one. I’ve done the water trick, but that does take a while. My bad, the fucking thing was $40.😮

Did a small bacon weave wrapped loin yesterday to run up the smoker for the turkey.

It turned out fantastic.  So soft and juicy it was able to be cut with a fork!

I could have done a little better with getting the bacon crispy.

 

#20 big bird ready for the smoker, put it on about 10:15 last night.

Hit max q about an hour and a half ago, smoker was at 215 or so, zipped up to 275 for the last few hours to get the nice crispy skin.

It is crazy how the stuff changes flavor when you cook.  I've been adjusting my seasoning because of how intense it can get, I credit the honey in that regard........

$40/ 40 lbs bag.

That was cheaper than what I could find on Amazon and they were in stock at the local TSC. They were on sale a month ago for 25% off and I forgot to pick some up.

Just looked those up. $22.95/ 20 lbs bag for standard woods and $27.95 for premium on their website. They discount if you order a 3 pack though.

$1/lbs is about as cheap as I've found here.
