Have a deal worked out with a wholesaler for quality meats 

The bellies I got looked great so we sat down and hammered out a deal.

Ordered 2 cases of pork butts tonight

Bone in and my cost was 1.37

What's nice about this meat supplier deal is I'll get a price list weekly and I can order on Monday and Thursday for tuesday and Friday delivery. Its 15 minutes from my house and I just drive up and everything is boxed and in a walk in cooler. This is a game changer for us

What I saved on taxes this year because of it paid for everything I spent including the smoker and probably a little more.

So it was a wise move

Gonna run by my butcher’s later this afternoon.  The snow on my applewood finally melted off.

I believe a case is 4 butts....probably about 40lbs but I'll see when they come

So I got fucked at work today. Made great money but the 9lb pork shoulder got neglected. I need to get it on the smoker, been marinating for a hour. I’m thinking a 10 hour smoke? I do have time in the morning if it stalls. I’m thinking 10 hours at 225 and see how it is? We have a hour drive to the in-laws for the cool down. I’m doing carnitas style but it’s the same thing as pulled pork, just a different seasoning. Keep in mind, I don’t do the wrapping thing, I usually increase my cook time and lower the temperature.  Any input?

Sad day here at the cabin. My 15 year old char-griller finally rusted to the point of no repair. RIP old friend.

New one should show up Tuesday. I went with the larger pro model this time. It stuck having to season a new grill/smoker.

It stalled at 165 like I thought it would. I still have 4 hours until we have to leave. Up to 250 and wrapped. This is where electric smokers rock.
