8lbs of butcher cut spare ribs on the smoker ......gonna go with a 6 hour smoke and hourly mop on these instead of the 3-2-1 method I have done the last few times

That's the way I like them, but the old lady prefers them wrapped to keep the bark to a minimum.

To f'ing cold to BBQ here today. Temp is now down to -3 at 10:30 after being 0 at 9AM. My weather station is saying -18 with the wind chill. Fuck that.

slightly different seasoning in the final rub. I corned beef and pastrami are both cured briskets though .....I cant wait to taste this one

ribs after 2 hours on the smoker ....pics was from this morning. They are under foil in the oven on warm right now and we will be eating in a half hour. Let me tell you they are incredible
